A bright and aromatic pepper, with incomparable perfume. Slightly sweet with citrus notes.
Voatsiperifery pepper is a plant native to the island of Madagascar. Very small, of a reddish brown, this pepper with a small stem has a really unique perfume. Its woody aromas can be reminiscent of flowers and citrus fruits, making it an ideal complement to fish and seafood dishes. Its barely sweet side, less pungent than black pepper goes well with desserts (think of the famous strawberries with pepper). Mixed with other peppers, it is also delicious with red meats. However, avoid cooking it too long, otherwise it will become bitter. Since it is not really grown and can be difficult to harvest, it is a spice that remains quite rare.
